Read “Once a Tramp.”   Make a paragraph outline of the essay.  Number the paragraphs and in a word or phrase identify the general subject.  For example, Fisher may be writing about eating grits in graph 20.   An outline entry would be   “20. grits”.   In a sentence or two explain the general structure of the entire essay.
